Love the "Hire a Chef" idea.
And I'll make the first recomendation to seek out: the recipe for the Berkshire Pork tenderloin and crisp belly (with house made pancetta, balsamic onion relish, and polenta) from the North Fork Table and Inn.
My wife and I came to LI for the weekend and ate here on Friday night. The place was packed and the food was great. Pricey, but completely worth it.
